Harvest period: from 4th decade of October to 1st decade of November
Oil with an intense, fruity personality. Clean and aromatic, well rounded to the nose, with green suggestions of arugula, bitter grass and chicory. Radicchio, followed by bitter almond and endive to the palate, decisively spicy.
It enhances delicate and simple dishes of both fish and meat, carpaccio and potage.
It goes perfectly with refined and balanced flavours.
