Martini EVO Oil

Ingredients

200 ml Gin
50 ml Extra virgin olive oil
1 cl Vermouth
Ice cubes

Preparation

Technique: Fat Washing, served in a Martini glass

Pour 200 ml of gin into a measuring jug (London dry recommended).
Add 50 ml of EVO oil and stir with a bar spoon.
Place the mixture in the freezer for a few hours until the oil solidifies and forms a disk.
Remove the solid oil layer with a spatula and filter the gin using a funnel into a clean bottle.
Pour 6 cl of oil-washed gin and 1 cl of vermouth into a mixing glass, add ice and stir.
Strain with a strainer and serve in a Martini glass.

Garnish

3 olives or a lemon zest twist
